Blue Cookies for Baby Hugh

Saturday I traveled to New Jersey to visit my girlfriend, Danielle, her husband, Larry, and their new baby boy, Hugh.

Hugh was born on November 16 and was a whopping 8 lbs 11 ounces (Kudos to Danielle).  Danielle and Larry were both so proud of their little man and I can see why:  he’s adorable!


He doesn’t know it yet, but he’s already a Penn State Fan :)

In celebration of the new baby boy, I wanted to bring some baby-inspired baked goods with me, but I didn’t have a lot of time on my hands Saturday morning.  Knowing that I had a boxed cake in the pantry, I whipped up some easy funfetti cookies topped with blue icing and sprinkles.  Making cookies out of a pre-made cake mix is easy, fast and the results are delicious.  They are the perfect snack to bake up when your crunched for time.

HOW TO:  MAKE COOKIES FROM A BOXED CAKE MIX

1.  Follow the instructions on the back of the cake mix adding all of the ingredients EXCEPT for the water.

2.  Roll Tbsp-sized pieces of dough into rounds and place on a greased cookie sheet.

3.  Press the bottom of a drinking glass lightly on each cookie, to create a flattened round.

4.  Bake at 350°F for 6-8 minutes, or until the cookie is just browned on the bottom.

5.  Place on a cooling rack.

6.  Ice with your favorite icing (store bought or home made) and decorate with your favorite toppings.

I had these cookies ready in 15 minutes!  ”H” for Hugh :)

And just because we’re talking about babies, I had to include a picture of mine.

She loves to sit in the window to soak up the sun :)

As for the rest of my day -

Saturday morning started with a 5-mile run with Hubs to prepare for next week’s Turkey Trot.

Saturday’s eats were a mish-mash of different things.  Post-run I enjoyed a Green Tea Tango smoothie from Smoothie King.  At Danielle’s house I munched on a veggie tray and ate two blue cookies.

Dinner Saturday night was enjoyed out with friends at a NYC Speakeasy (Sorry, the location is a secret…hehe).  The table shared some tapas: kobe sliders, mushroom flatbread, pork sliders and fries.

    Oh, he is SO cute! …and your puppy is adorable! The cookies look amazing! I’ve heard of the boxed cake cookies, but I’ve never seen them.

    Ok now I see there was an error. Well shabbott your cookies are absolutely look beautiful with coloured sprinkles. I have Pom( Truffles male dog) and my daughter dresses him up with ribbons and even painting his nails sometimes.
