Sweet Potato and Black Bean Chili

Vegetarian chili.

Yeah, I know what you’re thinking.  How can a chili that is lacking in all things ground meat actually taste good?

Well, this vegetarian chili just-so-happens to be both big on flavors and and nutritional content with vitamin-packed sweet potatoes and protein-packed black beans.

Plus, you can simply throw all of the ingredients in the crock-pot and let them simmer away while you go about your day.  Basically, if you can peel potatoes, then you make this meal.

It is the perfect bowl of warmth for the these cold winter months, especially if you just ran a Snow-A-Thon ;)

RECIPE:  SWEET POTATO AND BLACK BEAN CHILI

(Adapted slightly from Taste of Home)

Ingredients:

  • 3 Large sweet potatoes, peeled and cut into 1/2 inch cubes
  • 1 Large onion, chopped
  • 1 Tbsp Olive oil
  • 1 Tbsp Chili powder
  • 4 Cloves garlic, finely chopped or minced
  • 1 Tsp Ground cumin
  • 1/4 Tsp Cayenne pepper
  • 2 15-oz Cans of black beans, rinsed and drained
  • 1 28-oz Can diced tomatoes, undrained
  • 1/4 C. Brewed coffee (I subbed 1 Tsp. instant coffee mix)
  • 2 Tbsp Honey
  • 1/2 Tsp Salt

Instructions:

1.  Saute your chopped onion in olive oil over medium heat until translucent and softened.

2.  Add all of your ingredients, including your onions, to a crock-pot or slow cooker.

3.  Cook on high until potatoes are softened (about 2 hours), then reduce to the low or warm setting until you are ready to serve.

ENJOY!

I had leftover chili on Tuesday night with a dollop of sour cream and I have to say it was equally good as the first day!

I also had a great salad for lunch on Tuesday.

And some frozen fruit (peaches and strawberries) with yogurt and granola for breakfast.  Yum!

The morning workout:

  • 50 minutes elliptical
  • Abs, Knee-ups in captain’s chair (3 x 20 reps)
  • Abs, Regular crunches (3 x 25 reps)
  • Abs, Oblique crunches (3 x 25 reps each side)
  • Abs, Low ab leg swing downs (3 x 25 reps)

Dinner: Leftover pizza and a garlic knot

Dessert: Skinny Cow ice cream

    I’m trying the chili tonight! I’m excited about it!! My husband and kids are hit or miss on sweet potatoes, though. I’m hoping this is a hit! :)

    OK, I think this is going to be good, but I just have two questions. What size is the can of tomatoes? I used the big one (28 oz?). Also, I made it at 4:30 and went to check it in two hours but it was nowhere near done. It’s almost 10:00 and the sweet potatoes are still hard. Did I do something wrong? I’ve got the crock pot on high, but it is a large one, maybe that is the problem. But it certainly smells good, I’m looking forward to trying it.

      Hi Lauri – Yes, a 28-oz can of tomatoes is correct (I’ll update the recipe). As far as the sweet potatoes, did you cut them into 1/2 inch cubes? Mine were def cooked after 2 hours (I set the crock-pot to High). Is the chili bubbling? It could be that your slow cooker takes longer to heat up then mine did, but they should def be cooked in 5.5 hours. You could always throw everything in a big pot and heat it on the stove if you’re crockpot is giving you problems. I’m so sorry that it didn’t work out for you.

    A friend said that her crockpot took forever, so she got a new one. I wouldn’t say it didn’t work out, it just took longer. It was finished around 10:30, after six hours. Not a big deal since we don’t have any formal dinner hours around here, my husband works night shift. I’ve actually got a bowl in front of me right now. The verdict: delicious!! This recipe is a keeper, thanks!

      This is def one of my favorite recipes too! Sometimes I make the chili and then stuff them in flour tortillas with salsa for a tasty wrap!
