St John: Things To Do
While we were on the island of St. John, we spent a lot of time on the beautiful beaches that can be found scattered about the island. But, we also found time to do some other activities. As I mentioned before, St. John is mostly National Park, so there are plenty of great hikes. Luckily, we had a 4-wheel drive Jeep to get us around the hilly island. Believe me, you needed it! Additionally, the nearby British Virgin Islands offer some unique sights as well. Here are some of the great excursions and hikes that we did in St. John. … Continue reading

St John: The Beaches and Beach House
Hello everyone! I’m happy to say that I’m back from my blogging hiatus! I have soooooooooo much to share with you over the next couple of days, so I’ll try and break it down by category. Of course, I’m starting with my wonderful trip to the island of St. John, which was absolutely spectacular. The island of St. John is a US Virgin Island just west of St. Thomas, but it differs from most other islands in that the majority of the land and beaches are reserved as National Park. It’s wonderful – the beaches are basically untouched. In fact, … Continue reading

Where I’ve been and where I’m going
Hello friends. Wondering where I’ve been? Sorry that I’ve been missing in action lately, but there are some changes that are happening in my life and I’ve needed the extra time to wrap up some important things. I’ll definitely be sure to fill you in when I get back from vacation next week. And speaking of vacation… Hubs and I arrived to St. John USVI last night. We immediately enjoyed some drinks at a local bar. This morning we enjoyed some homemade pancakes a la Hubs at the Villa that we rented for the week. I also enjoyed coffee on … Continue reading
Quick Trip
Hi friends. How was your weekend? Mine was great, since it included a quick trip home to Clearfield, PA to visit my parents and to drop-off a certain pretty little lady. My mom is puppy-watching while Hubs and I are on vacation. And we leave Friday, by the way (insert: cries of joy). Did I mention that I’m going on vacation? To St. John in the Virgin Islands? Be jealous Saturday morning, the Hubs and I made our favorite Cinnamon Apple Crepes so that I would have a full belly to get me through the drive to PA. Unfortunately, Hubs … Continue reading

Bruschetta Egg Cups
I’ve been really loving the portability of baked egg cups for breakfast, and after the success of the Baked Western Egg Cups, I decided to have another go at them. Summer and spring remind me of fresh herbs and vegetables; light and tangy salads, dips and salsas; and bright colors. One of my favorite things to make during the warmer months is bruschetta – bursting with the flavor of fresh tomatoes and fragrant basil. I decided that those flavors would be equally tasty in a cute little baked egg cup. Luckily, I was right. For just 70 calories each, these egg … Continue reading
