There’s just something about risotto.  It’s creamy.  It’s comforting.  It’s delicious. It’s also time-consuming, which is precisely why I’ve shied away from making it for so long.  But, you know what I’ve learned?  Just because something is time-consuming, doesn’t mean that it also has to be difficult.  In fact, this recipe wasn’t very difficult at all. On April 6, I set out to form my latest Shabbott’s Habit: Breakfast of Champions. I apologize for my posts coming at weird times.  I’m experiencing some internet problems here in Puerto Rico, as storms move in and out.  I hope that everything is up and running again soon. San Juan, PR Day 1: El San Juan Hotel

El San Juan Hotel and Casino has – 1.  A great beach location. 2.  Beautiful property with multiple pools. 3.  A swim up bar!!!  Hellllooo frozen tropical drinks. 4.  A fitness room. 5.  And one hell of a fruit platter Hubs and I also ventured into Old San Juan this evening to Barrachina, the birth place of the Pina Colada. The also serve fabulous Caribbean cuisine.  Hubs and I started with the Puerto Rican Delights – corn fritters, croquettes and turnovers stuffed with chicken.
