Sweet Potato and Black Bean Chili
Pin It Vegetarian chili. Yeah, I know what you’re thinking. How can a chili that is lacking in all things ground meat actually taste good? Well, this vegetarian chili just-so-happens to be both big on flavors and and nutritional content with vitamin-packed sweet potatoes and protein-packed black beans. Plus, you can simply throw all of the ingredients in the crock-pot and let them simmer away while you go about your day. Basically, if you can peel potatoes, then you make this meal. It is the perfect bowl of warmth for the these cold winter months, especially if you just ran … Continue reading
When NOT to Run a Half Marathon For Time
Usually when I run a race I have a goal time in mind. Usually I have certain expectations for myself. Usually I push myself during the race. Saturday was not one of those kinds of races. Saturday morning I woke up at 6 am ready to tackle the Manhattan Half Marathon only to find out that there were 2 inches of snow on the ground and that it was still coming down. A quick jump on the New York Road Runner’s site informed me that in the interest of safety, the race would not be scored. I sauntered to the … Continue reading

Roasted Eggplant and Pepper Soup
Sometimes after a week of snacking and grazing, I’ll get my healthy juices flowing again with this wonderful roasted vegetable soup. Then again, sometimes I’ll just make this soup because it tastes so darn good. I’ve been big on soups lately, mostly because they are always so warm and comforting in the winter months. This healthy version is no exception. Big on flavor with roasted red pepper and thyme; low in calories with tons of nutrient-rich ingredients; creamy and velvety texture from the roasted eggplant and dash of cream. This soup will have you going back for seconds before you … Continue reading
Yonanas
Looks like a big bowl of ice cream with a decadent chocolate fudge topping doesn’t it? Well, it’s not. It’s Yonanas! Actually, it’s faux ice cream made out of pureed banana, also knows as banana soft serve. I’ve made it before for the blog using some almond milk and a food processor. However, my mom bought me a nifty little machine, called Yonanas, for Christmas that makes this process super easy. Plus, you don’t have to use milk, so the “ice cream” comes out super thick. Simply insert a frozen banana and Voila! Healthy ice cream. Thanks for the great … Continue reading

Le Cirque
It’s Restaurant Week in NYC! During Restaurant Week, select restaurants offer a 3-course lunch for $24 and 3-course dinners for $35. Now, if you’re not a New Yorker, then a $24 lunch or $35 dinner might not sound like a deal. But, seeing as some restaurants in NYC have entrees that themselves are well-over $35 a piece, Restaurant Week is the perfect opportunity to try some upscale cuisine without emptying your wallet. As soon as restaurant week was announced, I secured a reservation for dinner at Le Cirque, an expensive French restaurant on the east side. As expected, the decor … Continue reading

Lazy Days
Sometimes after a crazy week, you just need a couple of lazy days. Or, if you’re like Stormy – then everyday is a lazy day! Luckily for me, Sunday was quite lazy AND I had Monday off from work for Martin Luther King day. It was just the time that I needed to recharge. Sunday morning, I lazed around on the couch catching up on my DVR (and crying while watching Grey’s Anatomy), drinking multiple cups of coffee and eating a delicious smoothie bowl of blended yogurt and frozen berries topped with granola. I love this purple breakfast Around lunch … Continue reading
