Cauliflower Cheddar Soup

To me, it looked like bland broccoli, and broccoli used to be my least favorite vegetable. That is, until I tried cauliflower. I think that out of all the fitness questions that I get, the most frequently asked question is: “How do you workout in the morning?” It’s true that the thought of getting up at 5:30 am to hit the gym seems inconceivable to some people. Some people claim that they watch the Super Bowl for the commercials. While, I’m not one of those people (I actually like the football!) there were a few commercials that definitely caught my eye this year. Here are my votes for this year’s best commercials! Football Sugar Cookies
No Super Bowl Sunday is complete without some game-worthy eats. While in the past I’ve indulged in fried wings, mountains of nachos, french fries, chips, burgers and more brownies than you can imagine, this year I wanted to put a *healthy* twist on some of my favorites. Enter this low-fat sugar cookie topped with chocolate glaze. These cookies are just slightly sweet and cake-like, so the addition of the chocolate glaze is perfect. Pasta with Butternut Squash Sauce
A few weeks ago I went to Le Cirque in NYC and had a fabulous appetizer: pasta tossed with butternut squash and topped with whipped ricotta cheese and a piece of fried sage. I liked the flavors so much, that I decided to recreate something similar at home. This butternut squash pasta sauce is both savory and slightly sweet (but in a good way).
