Cauliflower Cheddar Soup

Soup-Close2

*If you haven’t already, be sure to check out my BLOGIVERSARY GIVEAWAY!* Cauliflower is one of those vegetables that I hated as a kid.  To me, it looked like bland broccoli, and broccoli used to be my least favorite vegetable.  That is, until I tried cauliflower. Today, one of my favorite ingredients is cauliflower, especially when its used in soups. It has the ability to transform regular purees to something that is velvety, rich and creamy without actually adding real cream to the mix. This soup is simple and easy and I love how the cheddar just sort of brings everything … Continue reading

5 (more) Tips to Become a Morning Workout Person

Sun

I think that out of all the fitness questions that I get, the most frequently asked question is: “How do you workout in the morning?” It’s true that the thought of getting up at 5:30 am to hit the gym seems inconceivable to some people.  And, rest assured, I haven’t always been a morning workout person.  But, what I’ve learned is that my best chance of completing a workout schedule starts with morning workouts.  That way, if I’m tired after work or want to hang out with friends in the evening, there’s no problem.  My workout is already done. Plus, … Continue reading

Football Sugar Cookies

Football-sugar-cookies

No Super Bowl Sunday is complete without some game-worthy eats. While in the past I’ve indulged in fried wings, mountains of nachos, french fries, chips, burgers and more brownies than you can imagine, this year I wanted to put a *healthy* twist on some of my favorites. Enter this low-fat sugar cookie topped with chocolate glaze.  These cookies are just slightly sweet and cake-like, so the addition of the chocolate glaze is perfect.  Oh yeah, and they look like footballs!  How cool is that?!?!? Did I mention that they’re only 65 calories each? RECIPE: SUGAR COOKIES W/CHOCOLATE GLAZE (Adapted slightly … Continue reading

Pasta with Butternut Squash Sauce

Butternut-squash-pasta

A few weeks ago I went to Le Cirque in NYC and had a fabulous appetizer: pasta tossed with butternut squash and topped with whipped ricotta cheese and a piece of fried sage. I liked the flavors so much, that I decided to recreate something similar at home. This butternut squash pasta sauce is both savory and slightly sweet (but in a good way).  Plus, the addition of ricotta cheese gives the sauce an irresistibly creamy texture. You feel like you’re eating a sinful cheesey pasta dish, but that couldn’t be farther from the truth. Don’t you love it when … Continue reading
