Cauliflower Cheddar Soup
*If you haven’t already, be sure to check out my BLOGIVERSARY GIVEAWAY!* Cauliflower is one of those vegetables that I hated as a kid. To me, it looked like bland broccoli, and broccoli used to be my least favorite vegetable. That is, until I tried cauliflower. Today, one of my favorite ingredients is cauliflower, especially when its used in soups. It has the ability to transform regular purees to something that is velvety, rich and creamy without actually adding real cream to the mix. This soup is simple and easy and I love how the cheddar just sort of brings everything … Continue reading

Super Bowl Commercials
Some people claim that they watch the Super Bowl for the commercials. While, I’m not one of those people (I actually like the football!) there were a few commercials that definitely caught my eye this year. Here are my votes for this year’s best commercials! Funniest Commercial: Baby takes Doritos Best Animal Commercial: Dog in Sketchers Heart Warmer: Ronald McDonald House Best Car Commercial: Hyundai Cheetah Easiest on the Eyes: David Beckham for H&M QUESTION: WHAT WAS YOUR FAVORITE SUPER BOWL COMMERCIAL THIS YEAR? And why, you ask, am I still thinking about the Super Bowl? Well, because I’ve been … Continue reading
Pasta with Butternut Squash Sauce
A few weeks ago I went to Le Cirque in NYC and had a fabulous appetizer: pasta tossed with butternut squash and topped with whipped ricotta cheese and a piece of fried sage. I liked the flavors so much, that I decided to recreate something similar at home. This butternut squash pasta sauce is both savory and slightly sweet (but in a good way). Plus, the addition of ricotta cheese gives the sauce an irresistibly creamy texture. You feel like you’re eating a sinful cheesey pasta dish, but that couldn’t be farther from the truth. Don’t you love it when … Continue reading
NYC Bucket List
I moved to NYC in November of 2008 and I’ve had a great time so far! But, as you can imagine, there are still a ton of things that I want to check off before I leave this great city. And so, to fullfil one of my 2012 New Years Resolutions and to motivate me to get out there are try these things, I present my NYC Bucket List. I’m sure I’ll be adding to this as I think of more things that I would like to do, and I’d love some of your suggestions as well! ___________________________________________________________ BRITNE’S NYC … Continue reading
A Healthier Snickerdoodle
Sometimes you just NEED something sweet. You know the feeling. Like wanting to run to the nearest Ben & Jerry’s and order the biggest gooey sundae that they offer. Because, I’ve never done that. Or, you could make these snickerdoodles. One of these options will leave you feeling guilty the next day, and I’ll give you a clue: It’s not the snickerdoodles. Not that I would know from personal experience or anything. Now, step away from the calorie-high goodies, because at just 55 calories a cookie, you can go ahead and eat some sweet without packing on the pounds! RECIPE: … Continue reading
