Weekend Muffins
This weekend was filled with plenty of good things: A kick-butt Saturday morning omelet (still steaming): A 4-mile Fall run with the Hubs, followed by a brownie Cliffs bar mini Taco night with the Hubs. Complete with mucho football watching on the couch with an icy cold beer. Yes, I know that it’s no longer October. Oktoberfest beer is a year-round staple is this household. Monday and Tuesday by iPhone
Catching ya up on my Monday and Tuesday. And, I’m blogging by iPhone! How Fun! Monday in brief: Breakfast – freshly picked apple warmed in the microwave, then topped with cinnamon and granola (this is my version of ‘healthy’ apple crisp). Lunch – turkey and cheese sandwich with tomatoes and lettuce. Plus, veggies on the side for crunching. Snackage – peanuts! Feeling better
As I mentioned yesterday, I’ve been feeling a little under the weather. I don’t know if I was actually sick or if I simply had post-vacation blues, but I took the day off from the gym to nab a little extra shut-eye. I’m feeling much better now. Revived! Breakfast this morning was a big bowl of fresh strawberries (1.5 C serving fruit) with yogurt and raw oats. If you haven’t tried raw oats as a topping, you really should. Recipe Mix Up
Something unexpected happened today. I saw a recipe for Bran Flax Muffins on the back of my Bob’s Red Mill package of flax meal and decided that I would make the muffins to share with all of you today. I organized the ingredients, preheated the oven, snapped a bunch of step-by-step photos and baked. Then I tasted them. They’re meh. Not bad. Not great. Muffin Celebration
I realized that I haven’t baked in a bit, and there were two lonely over-ripened bananas that were sitting on my counter just screaming to be used. “I need to be made into a baked good,” the small one cried. “I know that I’m brown, but please don’t put me in the trash,” said the other.
