Cauliflower Cheddar Soup

Some people claim that they watch the Super Bowl for the commercials.  While, I’m not one of those people (I actually like the football!) there were a few commercials that definitely caught my eye this year. Pasta with Butternut Squash Sauce

A few weeks ago I went to Le Cirque in NYC and had a fabulous appetizer: pasta tossed with butternut squash and topped with whipped ricotta cheese and a piece of fried sage. I liked the flavors so much, that I decided to recreate something similar at home. This butternut squash pasta sauce is both savory and slightly sweet (but in a good way).  Plus, the addition of ricotta cheese gives the sauce an irresistibly creamy texture. Running for Speed

As far as my running goes, I’m pretty much a comfortable pace kinda girl.  I know my “money speed,” where I can zone out and run for miles and miles without getting overly tired.  Push me beyond that pace and I feel uncomfortable, crampy and out of breath.
