Saturday morning the Hubs and I were up early to make one of our favorite weekend breakfasts: Cinnamon Apple Crepes.  Sooooooo delicious! These also served as my pre-run meal for my last run before the Manhattan Half-Marathon this weekend.  I tapered a little from my previous 10 and 12 mile run, so that my legs would be fresh.  8 miles in 75 minutes After my run I had a quick snack:  Ham and cheese rolled up in a whole-wheat wrap and some crackers.  I kept it light because I knew I had an awesome meal ahead of me. Le Bernardin

Tonight my sister, brother-in-law, the Hubs and I took part in a very special dining experience.  We dined at Le Bernardin – the three Michelin star restaurant of celebrity chef, Eric Ripert.  Known as a master of seafood, Ripert delicately prepares his cuisine as “almost raw”; “barely touched”; or “lightly cooked”.  Le Bernardin is just one of the five 3-star Michelin restaurants in New York City and was named the 11th Best Restaurant in the World by Restaurant magazine. NYC Vegan Cafe

It has been raining in NYC.  All.  Day.  Long. Usually, days like this will leave me feeling glum Luckily, I had something to cheer me right up: dinner out with a friend Tonight I had a wonderful vegan dinner with my friend, Anna, at the Peacefood Cafe on the Upper West Side.  Meat-loving Hubs would not have approved, but Anna and I are “healthy foodies,” so this was right up our alley.
