Getting caught up

Subway_Club

It’s been one of those weeks. The kind of week where you’re so busy that getting a few moments on the couch to just sit and breathe would be glorious.  But it doesn’t happen, because you don’t have time. The kind of week where you would have loved to cook a nice meal, but you barely have enough time to grab something out of the fridge. The kind of week where you’re so busy that you forget what day it is.  Hello Friday.  When did you happen!?!? I’ve been on overdrive for a week people – and let me tell … Continue reading

Spin, Spin, Spin

Schweaty

Every day this week I would announce to the Hubs that I would be getting up in the morning in time to make the 6:00 am spin class at the New York Sports Club. Every day this week I would hear the alarm go off at 5:25 am and then would proceed to hit snooze 3-4 times.  How is it that the bed becomes like 25% cozier when it’s time to get up?  Snooze > Spin class. Today, however, I finally made it to spin!  And I must say, thank you New York Sports Club for offering a spin class … Continue reading

Playing Catch-Up

Bean-burger-salad

I said that I would be back to my normal daily posts today. Which brings something to mind.  Do you know what the worst part of vacation is? Going back to normal. I have some serious post-vacation depression going on today.  From my lack of sleep last night (I’m used to going to bed late and sleeping late) to my lack of motivation to get to the gym this morning.  Oh yeah, and there was no white-sand, sunny, tropical island to visit today.  Boooo. Instead of beaches, this morning started with an old oatmeal friend: low sugar maple oats with … Continue reading

Family-inspired Mango Salsa

Mango-Salsa

When I was in Connecticut this past weekend, I went over to visit my sister-in-law. Our conversation went something like this: Sis: “Hey, Mike made me the most amazing meal the other night.  I almost posted a pic on Facebook just for you.”  [Mike is her chef husband...I know, I know, how lucky is she?] Me: “What was it?” Sis: “Fish with pineapple mango salsa.  It was sooooo good.  And healthy too!  The mango salsa just had mango, pineapple, red onion, lime juice and cilantro.  You could put it on chicken too.  You should make it for your blog!” Me:  … Continue reading

Randomness…

Mexi-Yum

Today was a little random. It started like an other normal day, with a trip to the gym… 4 mile run 20 minutes ellipse Shoulders, light legs, abs …oatmeal with banana (1 C serving), peanut butter, flax seed and cinnamon. …and salad with romaine (1.5 C serving), peppers (0.5 C serving), carrots (0.25 C serving), turkey and Asian vinaigrette. Randomness began after work.  I had BIG plans to clean my apartment, start on a pile of laundry, work on some things for my vacation next week, cook pork chops on the grill and bake a low-fat banana cake with an … Continue reading
