Stuffed Pork Tenderloin
Sometimes I get tired of chicken. I mean, really, how many ways can you possibly prepare a boneless skinless chicken breast? So, tonight I decided to make “the other white meat.” I really love the simplicity of pork tenderloin roasted in the oven. You can marinate it overnight, crust it with a nice spice rub, or stuff it with something yummy. After a quick scan of the freezer and fridge I decided on a stuffing that is partly inspired by that popular spinach-artichoke dip that you see at many restaurants. RECIPE: GARLIC-SPINACH STUFFED PORK TENDERLOIN Ingredients 2 Medium pork tenderloins … Continue reading

Say Yes to Fruits and Vegetables
Okay people. Time for a new Shabbott’s Habit!!! Today I start “Say Yes to Fruits and Vegetables” an initiative to get the recommended amounts of fruits and vegetables each and every day. Now, I don’t know about you, but I grew up using the good old-fashioned food pyramid (did I just make a reference to myself being old-fashioned? gag). According to that categorical description, one should consume 3-5 servings of vegetables and 2-4 servings of fruit each day. However, in doing more research, I also stumbled onto the new food guide pyramid. Did anyone else find this confusing? Me too, … Continue reading
Magic Steel Cut Oats
Steel cut oats. They plague me. Sure, they’re healthy, but when I wake up in the morning, I’m hungry. This is not conducive to standing over a bubbling pot of oatmeal for 30 minutes. For that reason, I don’t normally eat steel cut oats. But, I want to entice you with my steel cut oats that took five minutes of prep work. Now, that’s my kind of breakfast. How did I do it? Friends, let me introduce you to Britne’s Easy Thermos Oats. HOW-TO: MAKING STEEL CUT OATS WITH A THERMOS Ingredients: [makes one serving] 4-6 C. Boiling water 1/4 … Continue reading

Not to complain but…
Today was on of those days…you know the kind. Where you want to go home, put the covers over your head and have a pity party for yourself. It all started when I woke up in the middle of the night not feeling so well. I had a horrible stomach ache, coupled with indigestion. Probably from all of the sugar that I consumed at the bridal shower yesterday (cake, chocolate-covered strawberries, cookie, punch), compounded by the fact that I ate mostly trail mix for dinner. My stomach turns just thinking about it. Of course, I couldn’t get back to sleep … Continue reading

A-Maoz-ing
Vegetarian falafel joint with all you can eat fixings salad bar? Yes please. Tonight I met my friend, Anna, on the Upper West Side for some falafel at Maoz. I love that they say “Meat eaters welcome.” While the place is small and reminds me of Middle-Eastern fast food, I’m not about to pass up lots of spicy, marinated veggies. Maoz is white, clean, fast, cheap and tasty. Why argue? We each had the salad box, which featured 4 tasty falafel balls on top of romaine lettuce. The falafel was crispy and flavorful. I got the hummus add-on and headed … Continue reading

Boozy Chicken
First, check out my newly updated pages: About page Habits page Back in college, at Penn State, my BFF – Lauren – worked at a place called Duffy’s Tavern. Duffy’s was mostly known by the college kids for their cheap wings in the Tavern section of the establishment, but was known by others for the the fantastic food in their fine-dining restaurant. This boozed-up chicken was inspired by one of Duffy’s finer dishes. An unlikely combination of ingredients that just works. RECIPE: AMARETTO ALMOND CHICKEN Serves 3 Ingredients: 3 Chicken breasts 2-3 C. Sliced mushrooms 2 Tbsp. Margarine or Butter … Continue reading
