Microwave Carrots

Carrots-in-microwave

Sometimes after a long day of work, the last thing that I feel like doing is cooking. Other times, I have something planned for the evening and simply don’t have the time to cook, even if I wanted to. We’ve been taking Stormy to obedience class on Thursday nights.  Yeah, she looks innocent enough doesn’t she?  Do not be fooled The scheduled 7pm class means that I’m rushing around when I get home from work to pack up her materials and to grab a quick bite to eat before I go. In other words, my Thursday meals need to be … Continue reading

Figgy Fall Salad

Fall-Fig-Salad

Sorry that I haven’t had the chance to share the recipe for this amazing Fall Figgy salad from the other night until now. Usually when I tell the Hubs that we’re having a salad for dinner he groans.  Hubs doesn’t exactly equate salad to man food.  But, when he looked at the ingredients that I laid out for this particular Fall-inspired salad I got the dreaded double groan  What are these? [holds figs up].  Am I going to like this? “They’re figs and I don’t know if you’ll like this, but you’re going to try it,” I said [in best … Continue reading

Mango Chipotle Cilantro Chicken

Mango-Chipotle-Chicken-finished

Mango. Chipotle. Cilantro. Chicken. All ingredients that I love.  So I knew when I saw the Chipotle-Mango BBQ Chicken over at Pip & Ebby that I had to make it.  I made some adjustments (like adding lime zest and brown sugar and subbing red wine vinegar for rice vinegar) to suit my own taste buds, but really the credit goes to Pip & Ebby for their innovative combination of flavors. The great thing about this sauce is that its both sweet and smoky at the same time.  I could see this smothered on fish or even used as a condiment … Continue reading

Pretzel Fail

Pretzels.  Salt-kissed, doughy twists of goodness. The perfect mall-time snack.  Fuel for future shopping.  Or are they? After dealing with a leak in our apartment that has now left us with a giant hole in our ceiling, the Hubs and I had to run to the mall for some errands.  We hadn’t eaten dinner and although the Cheesecake Factory was taunting us, we decided that we would wait until we got home to cook something.  I suggested that we grab a pretzel to hold us over.  The Hubs wanted pepperoni, so we decided to ‘split’ one since it was just … Continue reading

Spin, Spin, Spin

Schweaty

Every day this week I would announce to the Hubs that I would be getting up in the morning in time to make the 6:00 am spin class at the New York Sports Club. Every day this week I would hear the alarm go off at 5:25 am and then would proceed to hit snooze 3-4 times.  How is it that the bed becomes like 25% cozier when it’s time to get up?  Snooze > Spin class. Today, however, I finally made it to spin!  And I must say, thank you New York Sports Club for offering a spin class … Continue reading

Hubs Grills

Kabobs-cooked

Yesterday was a BEAUTIFUL day in the City, so I called the Hubs out on Facebook in hopes of inspiring some man-grilling. When I got home from work, I was happy to see that the Hubs got the message. Kebabs!  Or as my very mature husband likes to say – Keboobs Munchies while the Hubs grilled.  Crumbled pita-chip fragments from the bottom of the bag – love these crunchy little bits. Dinner a-la-Hubs was skewered beef, veggies (onions, bell peppers, tomatoes; 1 C serving veg) and pineapple (0.5 C serving fruit), over couscous. And corn on the cob, grilled right … Continue reading
