I love College football. I bleed blue and white I am a die-hard Penn State fan. That might have something to do with the fact that I was a Penn State Cheerleader. Mid Week Eats

WEDNESDAY: For breakfast I grabbed a yogurt to have with some fruit that I planned on nabbing at the NYC fruit and veggie vendor outside of my work building…but…he’s gone!  I’m thinking that this officially means that it’s the end of the summer season   I knew that I was having a light soup supper, so instead I grabbed a low-fat blueberry muffin and hot coffee for breakfast instead. Golfing and BBQ

I’ll get to the Golfing and BBQ in a bit But first, here’s what happened earlier… FRIDAY Friday started off with some oatmeal, bananas, PB2 and raisins.  All served with a big iced coffee. Salad for lunch (of course). For dinner I sauteed some shrimp, broccoli and Lemon-Pepper pasta from Trader Joes with lemon juice, olive oil and parmesan cheese.  Simple and tasty!  Fudgesicle for dessert. Snacks included an afternoon apple with 2 egg whites (trying to get more protein). Not a Lazy Saturday and Bruschetta Chicken

Hubs and I had a very busy day, but at least it ended with this fantastic dish! I make a pretty fantastic bruschetta, and recently thought to use those flavors in an entree.  This bruschetta chicken course is simple and delicious and has less than 8 ingredients!
