Football Saturday
I love College football. I bleed blue and white I am a die-hard Penn State fan. That might have something to do with the fact that I was a Penn State Cheerleader. Golfing and BBQ
I’ll get to the Golfing and BBQ in a bit But first, here’s what happened earlier… FRIDAY Friday started off with some oatmeal, bananas, PB2 and raisins. All served with a big iced coffee. Salad for lunch (of course). For dinner I sauteed some shrimp, broccoli and Lemon-Pepper pasta from Trader Joes with lemon juice, olive oil and parmesan cheese. Simple and tasty! Hubs and I had a very busy day, but at least it ended with this fantastic dish! I make a pretty fantastic bruschetta, and recently thought to use those flavors in an entree. This bruschetta chicken course is simple and delicious and has less than 8 ingredients! RECIPE: BRUSCHETTA CHICKEN Ingredients: 4 thinly sliced chicken cutlets (Equivalent of 2 breasts butterflied) 1 Large Tomato 2 Cloves Garlic 2 Tbsp. chopped basil 1 Tbsp.
