Unfortunately, while canned and store-bought soups are a quick lunch or dinner choice, they are also full of sodium and other mystery ingredients: monosodium glutamate, sodium phosphate, modified food starch, maltodextrin. I even saw a can of soup that listed “spice” as an ingredient, in addition to “chicken flavor.” Yeah, Campbells, that’s not vague. For that reason, I really love to make my own homemade soups. Going ‘Nuts’ for Butternut Squash!
Yesterday I was all about Nutella, but today I’m all about ButterNut…I must be going Nuts! All joking aside, this soup is simple and to the point, and was tonight’s dinner. Up until about a year ago, I had never even purchased a butternut squash, let alone attempted to make a soup from it.
