Ginger Buttercup Squash Soup

Close-2

One of my favorite things to do during Fall is to put on a cozy pair of sweatpants, my zip-up hoodie and a pair of fuzzy sucks, and plop myself on the couch with a blanket, a bowl of warm soup and a DVR full of trashy celebrity shows like Keeping Up With the Kardashians stimulating documentaries. When I saw this buttercup squash in the supermarket the other day, I knew that I had to have it.  I’ve used butternut squash, pumpkin and kobacha squash in the past, but this little round guy was a mystery to me. After some … Continue reading

End of Summer Veggie Soup

Soup-pot

I swear that the moment we hit September it went from being sunny and warm in NYC to being rainy, drab and chilly.  I had to wear pants, a jacket and close-toed shoes to work today.  I’m sad because Summer is by far my favorite season of the year. Some things I love about Summer: Grilled food BBQ Summer vacations – like my Family Cruise and Miami trips Playing outside – running, hiking, swimming, biking Wearing dresses Eating fresh in-season fruit Feeling the sun on my face Laying out and reading a good book Camp fires The smell of fresh … Continue reading

Unfortunately, while canned and store-bought soups are a quick lunch or dinner choice, they are also full of sodium and other mystery ingredients: monosodium glutamate, sodium phosphate, modified food starch, maltodextrin.  I even saw a can of soup that listed “spice” as an ingredient, in addition to “chicken flavor.”  Yeah, Campbells, that’s not vague. For that reason, I really love to make my own homemade soups.  I know what I’m putting into my soup pot and I can be sure that it’s healthy.  Plus, my soups are generally simple, contain few ingredients and taste better than canned soups (if I … Continue reading

Cinnamon Raisin Swirl has led me to eating what I believe to be waaaay too much peanut butter for dessert in the evenings.  Especially because I’ve been slathering the stuff on my morning oats.  That’s why I’ve decided to give up nut butters after dinner for lent   40 days without dipping my spoon in a nut butter jar.  I think I can make it.  *Edit 3/10/11:  A reader … Continue reading

Going ‘Nuts’ for Butternut Squash!

Enjoy

Yesterday I was all about Nutella, but today I’m all about ButterNut…I must be going Nuts! All joking aside, this soup is simple and to the point, and was tonight’s dinner. Up until about a year ago, I had never even purchased a butternut squash, let alone attempted to make a soup from it.  That all changed when my sister-in-law’s hubby (who also happens to be a chef) made me butternut squash for my birthday.  I loved the sweet taste and creaminess of the soup and the color was just fantastic.  I went back for seconds.  And thirds.  And…hey no … Continue reading
