Getting My Groove Back

Shrimp-broccoli

Finally.  I hit the 5-mile mark on my run at the gym this morning.  There’s just something about crossing that barrier that always makes me feel like I’m getting back into things. In fact, it’s been a real struggle returning to my normal running schedule after suffering from an ankle sprain this spring while training for a half marathon.  It seems that I’m finally getting my groove back and I couldn’t be happier.  I’m sticking to the treadmill for the most part (no rocks, uneven surfaces, etc) and am wearing an ankle brace when I do venture outside. ANNOUNCEMENT: The … Continue reading

Playing Catch-Up

Bean-burger-salad

I said that I would be back to my normal daily posts today. Which brings something to mind.  Do you know what the worst part of vacation is? Going back to normal. I have some serious post-vacation depression going on today.  From my lack of sleep last night (I’m used to going to bed late and sleeping late) to my lack of motivation to get to the gym this morning.  Oh yeah, and there was no white-sand, sunny, tropical island to visit today.  Boooo. Instead of beaches, this morning started with an old oatmeal friend: low sugar maple oats with … Continue reading

Vitamin D Here I Come

Shorts-in-NYC

It was a high temperature of 82 F in NYC today.  The sun was shining and I could actually feel the warmth on my skin So, after a day filled with reading and research for a project at work, I decided to get out and get some fresh air to recharge.  I put on my yoga pants, then just before leaving, decided to change into shorts. That’s right…these legs haven’t seen the NYC sun for a very long time.  Vitamin D, Here I come!!! I absolutely HAD to stay up late last night.  There was just no getting around it.  … Continue reading

Sesame Asparagus

Sesame-asparagus

I whipped up this sesame asparagus tonight for a quick and healthy side dish.  Some people don’t realize how easy it is to transform vegetables with a few simple ingredients.  I used brown sugar in this dish to balance out the salty flavor of the soy sauce and added sesame seeds for richness and crunch.  You won’t be disappointed by how simple and tasty this is. RECIPE:  SESAME ASPARAGUS Ingredients: 1 lb. Asparagus spears, bottoms trimmed off 2 Tbsp. sesame seeds 3 Tbsp. Soy sauce 1 Tbsp. Brown sugar (or sub honey) 1/2 Tbsp. Sesame oil Pinch of red pepper … Continue reading

Powdered Peanut Butter

PB2

This morning it was cold in NYC again.  This seems to be the trend.  The Hubs’s car was being inspected and serviced and I ran a long run yesterday, so this morning’s cardio was a power-walk (4 miles) through the hills of the neighborhood.  It was nice to be outside, but it was definitely chilly! Breakfast this morning was oats with banana and my own peanut butter concoction. Have you heard of PB2?  PB2 is a powdered peanut butter.  Genius. Through a special chemical-free process, the people at Bell Plantation remove 85% of the fat calories from regular peanut butter.  … Continue reading
