Chicken Barley Soup For The Soul

Its currently waaaaaaaay past my bedtime (I’ve been up packing for Vegas), so I won’t bore you with the same old oatmeal and coffee breakfast, or the typical turkey sandwich and carrots lunch.  But, I will share this easy slow cooker chicken barley soup. I love using the slow cooker for things like soups, sauces and stews.  It couldn’t be easier.  I diced up some ingredients before work this morning (total prep = 20 minutes), and had a delicious and healthy dinner waiting for me hours later when I got home. Farm Fresh Egg Sandwich

This morning I was at my in-laws in Connecticut after celebrating my friends’ engagement last night.  The Hub’s aunt & uncle have a farm in Connecticut and we were treated to a special delivery this morning – farm fresh eggs!  My father-in-law said, “right from the chicken, yesterday.” I wish I would have taken a picture of these eggs as they were being fried up.  You can really tell the difference in the yolk.  Farm fresh eggs have a vibrant yellow yolk that store-bought eggs can not compare to.  This morning’s eggs were scrambled, covered in melty cheese and served … Continue reading

Easy Pesto You Can Freeze

The Hubs and I have some furniture moving to do tonight.  Given how much snow we’ve had in NYC, its not surprising that our gutters froze, causing a leak in our bedroom. The landlord is coming tomorrow to repair the whole back wall of our bedroom, so we need to move our furniture, pack up our picture frames and move the mattress out of the room (in case there is dust or, God forbid, mold in the wall when it comes down).
